Honey Candy

We used to make this as kids. It becomes my favorite color. It's honey-extracting season in the fall -- so make sure you use the fresh, real good stuff from the honey house.

2 cups sugar
1/2 cup honey
3/4 cup water
1/2 tsp cream of tartar

Cook the above on the stove-top until hard-ball stage. *What is hard-ball stage? I wait until the mixture has boiled for a while, then I take a spoon and dip it in the pot and then let some "drip" into a cup of cold water. Test the stuff with your fingers immediately. If it turns into a hard ball or string, it's ready. If it's still soft and gooey - keep boiling. Do this right, or you'll be sad.

Pout onto buttered cookie sheet. Cooll and bit. Add a dash of salt and 1 tsp. vanilla. Butter your hands and begin pulling the mixture. Pull and fold, pull and fold, pull and fold- Over and Over again until it begins to turn into shiny, almost white-ish taffy. It'll get kind of hard. Then twist it into a pretty rope and place on buttered wax paper. Cut it into bit-sized pieces. You'll love this stuff. Nummy good.
