Frozen Corn

It's super simple. And, there is NO substitute in the world.

Grow your own corn (or purchase it from a neighbor or farmer's market) - it'll be organic and sweet.

Pick it when the tassles are dry and shuck it. Wash it all off and remove as many strings as you want.

Put cobs in boiling water (I use a giant stock pot on my camp chef on the porch).

Boil for 4 minutes. Remove and place in cold water. (I always have a cooler of cold water waiting)

Place slightly cooled cobs on cookie sheets and start cutting. DON'T cut down to the core. That is yucky in the bag. Eat plenty of cut corn while you are bagging, but maybe not so much you get a gut-ache.

Bag the corn in freezer bags, label the year on your bags with a sharpie marker and place in freezer. **make sure your bags are dry or they will freeze together - I learned this from experience one year.

Enjoy until next year's fresh corn is ready!
