Thin Salsa - bottled

Combine in large, heavy pot:

Use your blender - just go for it.

* 15 lbs. tomatoes, peeled and cored (dip them in boiling water until the skins crack -for about 30 seconds- and then remove to a cold water sink or bowl and the skins will come right off)
*3 cups onions
* 1 Tbsp. Cumin
* 1 Tbsp. Oregano
* 3 garlic cloves
* 3 -4 Tbsp. cilantro (dried)
* 6 anneheim peppers - seeds removed
* 3 green bell peppers - seeds removed
* 1 Tbsp. salt
* 2 Tbsp. sugar
* 2 cups Vinegar
* 3 Tbsp. olive oil

Just blend it all up and put in hot jars. Water-bath for 25 minutes.

*****If you want some kick to this, you'll need to add a couple of jalapenos. That's all it takes. This salsa reminds me of the kind the Mexican restaurants serve you.... thin but yummy. Yes, I double this when making it because I don't like to clean up twice....
