Apple Yum-Butter

This tastes a lot like the Pear Butter I make, but it's all about the Apples.

*8 lbs. apples - washed and halved (no need to core or peel, we'll use the strainer)
* 2 cups apple cider
*2 cups vinegar
*2 1/4 cup sugar
*2 1/4 cup brown sugar
*2 Tbsp. cinnamon
*1 Tbsp. ground cloves

Cook sliced apples in cider and vinegar until soft. Run this all through the Victorio Strainer. Cook sauce with spices. Make sure you stir frequently - It's a rule when canning (because it really bums you out when you scorch something that took all this effort...)

***To test if it's done, remove a spoonful and hold it away from steam for 2 minutes. If it's done, the "apple butter" will remain rounded on the spoon and not spread. Or you can spoon some on a plate and if no rim of liquid forms on plate, it's ready.

Put in hot, washed pint or jam jars and process in water-bather for 15 minutes.

This recipe is really worth it -- especially if you like hot muffins in the winter. Numma.
