DILLY BEANS

After the 5th request this month, here's the recipe you're all DYING for:

boil until dissolved:
4 cups white vinegar
4 cups water
1/2 cup salt


Put one clove of garlic (peeled) in the bottom of the jar with 1 - 2 sprigs (heads) of dill and a (very) small shake of red pepper flakes.

Snip tops off beans and try to stuff as many as you can in the jar. I like to attempt to use all the straight ones because they fit better in a wide-mouth pint jar. Pour the hot mixture over the top and water bath for 15 - 20 minutes.

This makes 7 pints. Good Luck!

Additional note: I wanted my dilly beans crispy crispy last year, so I picked them, washed them 3 times, and placed them in ICE WATER for about 30 minutes before I stuck them in the jars. It worked! Everyone loves them. I can't keep the cousins out of them. :) (talking about you, Quinn)

Yummy! That is my exact recipe too. Did I give it to you? This will be a great blog. I will try to get one going too but it might have to wait until the kids are in school.
