Carmel Spice Pear Butter

Okay. My Kort can eat an entire jar of this in one sitting along with hot homemade bread. You just have to try it.

-15 large ripe Bartlett Pears
-2 Cups water
-6 cups sugar (1 1/2 cup of this carmelized)
-1 1/2 tsp. cinnamon
-1 tsp. cloves
-1/2 tsp ginger
-2 Tbsp. lemon juice

-Core, but do not peel pears. Add water and boil til tender (about 30 minutes). Cool. Whirl in food processor.
-Carmelize 1 1/2 cup of sugar. (How do I carmelize sugar? Well, you put it in a frying pan on medium and start stirring. Pretty soon it turns kind of carmel color and liquidy. That's all you have to do)
- Add the rest of the sugar to your pears. Add all the spices.
- Boil (simmer) until thickened (about 45 minutes) -- STIR a lot or you'll be sad. It'll scorch.
- Stir in Lemon juice just before removing from the heat.
- Pour into hot, clean pint or smaller jars and water-bath for about 20 minutes.

Oh - I guess I had better go make bread now. I'm craving this now.
